Yam Hash Platter

Time to cook and what to cook is always a challenge. Even as a food blogger can you believe that sometimes I just don’t feel like putting a pot on the fire? Preparing my Yam Hash was easy breezy. It was simply a case of putting everything on the plate and getting my yam to take up as much flavour as possible.

Yam tastes so good when you can get it to absorb some well flavoured oil. Hot yam boiled till very soft, drizzled with palm oil or butter is one of my all time favourite simple meals.

Weekend breakfast in Nigerian homes is Moin Moin and Ogi, boiled yam and egg stew,  Akara and Ogi. Yam Hash platter is going to be one of my Saturday breakfast options going forward.

Recipe for Yam Hash

Ingredients

2 slices of Yam, peeled and cut in cubes

4 pieces fresh Tomato

2 Scotch bonnet Pepper

1 medium size Onion

Black pepper

1 cup chopped Bacon or Sausage

2 Eggs

1 cooking spoon vegetable Oil

Seasoning to taste

Pinch of rosemary or thyme

 

Method
  1. Cut the bacon or sausage into small bits. Sometimes in the big shops you may find already cut up bacon.
  2. Boil whole tomatoes, pepper and large onion chunk till the juice dries up in the vegetables.
  3. Boil the yam cubes till soft.
  4. Put the bacon in a pot and fry till the bacon is crisp and brown and the fat starts to come out. Add the boiled yam and allow the yam to absorb the oil from the bacon and become crispy on the outside.
  5. In a separate pot fry the cooked tomato, pepper onion, a pinch of seasoning cube and  thyme for a few minutes .
  6. Add vegetable to the yam and bacon. Do not blend the vegetables. Add a little black pepper to the mix and stir.
  7. Top the yam hash with fried egg. Serve warm.
