Nigerian Coconut Puff Puff is a simple twist to one of Nigeria’s common snack or street food. And is there any Nigerian party that serves small chops without Puff Puff? By the way some people call it Kpo Kpof or Kpof Kpof. What ever it is this easy to make snack is a delight to have particularly when served hot or warm.

I don’t know about you but I am getting bored with the regular puff puff. When I am served at parties I seem to push it aside. Well that is because I am quite conscious of not loading my system with unnecessary  carbohydrate. But again I think its because I have not been tempted with interesting varieties. So I I have Nigerian Coconut Puff Puff. The crunchiness of the toasted coconut shreds as you bite into each ball is a delight to the mouth. My kids even took it a step further. They got to dip the balls in melted chocolate and it was simply decadent and amazing. I see this working as a dessert.

I will advise that you follow the ingredient measurement to the letter. Pastry cooking does not allow for too much flexibility when it comes to quantities. So the otherchallenge people have with making puff puff s to get that round shape. Well thanks to 9jafoodie a fellow food blogger, she has come up with the solution. Just arm your self with a zip lock bag and a pair of scissors and your balls will turn out round. However if you are a pro in terms of dropping the balls into oil  from between your thumb and fore fingers then go ahead. Making Nigerian Coconut Puff Puff or any pastry dish requires practice.

How to make Nigerian Coconut Puff Puff?

2 cups plain Flour
1 tbsp  instant dry Yeast
3 tbsp Sugar
1/2 tsp of Salt
1 tsp Nut Meg

1/2 cup toasted Coconut shavings
11/4 cups tepid Water
Enough vegetable oil for frying

Method
1. Sieve flour into a clean bowl and add yeast,sugar,salt and nutmeg and mix properly.
2. Add the warm tepid water and mix well until you have a smooth paste. You can do this with your hands.
3. Cover with a clean damp cloth set in a warm place and allow mix to rise until double the size for 30-45 minutes.

4. Add the coconut shavings and mix with your hand to incorporate the coconut well into the dough. To make the coconut shavings, grate coconut flesh with the big hole part of a grater. Spread it thinly on a baking tray and bake till light brown and dry. You can also dry fry the shavings on a burner but you have to turn very frequently to prevent burning.
5. Scoop dough with a spoon drop into a moderately hot oil and fry till golden brown.
6. Drain fried products on a kitchen paper in a colander  and serve warm. You may wish to sprinkle a little icing sugar on the balls.

TIP for getting round shaped Puff Puff balls:

1. Cut the one of the tips of the zip lock bag at the base with a scissors. The size of the hole should allow the dough to squeeze out freely

2. Pour the dough into the bag. You can divide the total quantity here into two.

3. Hold the bag tight and squeeze from the top as if you are decorating a cake. The dough will press out like tooth paste.

4.Hold bag over pot of hot oil, do be careful. Using a scissors cut the dough into the oil.

5. You drop the bag when you have enough balls in the oil and continue to turn the balls until golden brown all over.
