Mango Chicken sauce is one dish you should be cooking in this season of mangoes. With Mangoes in season, pairing this flavourful tropical fruit with chicken is one other way to enjoy mangoes. Growing up in Aba and living with my parents at the Government Residential Area with large mango trees I grew to love mangoes. The smell of freshly plucked mangoes is so irresistible. In the southeast of Nigeria there were many varieties like ‘opioro’ which remained green even when its very ripe. The name is derived from the long shape. Peter and Paul were the big and fleshy ones but also tangy in the middle. Then the last ones which did not have a specific name will stick in between the teeth and you had to take forever to dislodge the ‘rope’ of the mango out of your teeth.

This recipe here is not going to leave any threads between your teeth. In fact when I was done tasting this dish I thought I was eating a sweet and sour dish in a Chinese restaurant. Or as some of my eastern brothers will call it ‘Chineze’. Really this is a must-try recipe as soon as you find mangoes in your neighbourhood .

How to make Mango Chicken sauce?

2 Chicken laps or legs

1 Garlic clove, minced

Fresh Ginger the size of your middle finger

Chicken seasoning to taste

Salt to taste

Scotch Bonnet Pepper to taste

1/2 small size Onion

1 cooking spoon Vegetable Oil

One cup Mango puree

1 teaspoon Honey

One cooking spoon Mango cubes

Method

1. Season the chicken with chicken seasoning, black pepper , dry ginger and salt and allow to marinade for about 30 minutes

2. Heat the oil and brown the chicken on both sides.

3. Add a little water to the chicken, scotch bonnet pepper, reduce the heat and cook slowly until chicken is cooked

4. Add the ginger strips to the chicken and cook for about 3 minutes

5. Mix the mango purée with the honey and add to the sauce and cook for about 2 minutes.

6. Lastly add the mango cubes, cook for a minute and serve sauce with boiled rice.
