How to make Plantain Mosa

January is a time many Nigerian women are at their wits end as to how to manage with all the household chore because many domestic helps are off on holidays.
I had cause to tidy my  fridge when my cook Janet went off on Christmas break that seemed to last forever. I really appreciate her years of service.
Of course I discovered some overripe plantains and it had to be  Mosa and pepper sauce for breakfast. Food waste is something that should be avoided as many in the world do not have enough to eat even in a day.

I just acquired this Pancake puff pan which I just put to use in frying my Mosa. I am excited with this new cookware. Reduces my use of oil. You can fry normally but drop the Mosa on kitchen serviette to drain excess oil.

Having lazed around a bit I ended up having my Mosa as mid afternoon snack with my perfect afternoon  drink some Water Melon juice with soursop fruit loaded . I loaded it  with lots of iced cubes.

Something I have been meaning to do is also to clear up clutter in the house. First project is to clear out  old school books my children have left at home . The less privileged children in primary and secondary public schools in Lagos, will find  good use for them . Quite a lot of books….

Recipe for making Plantain Mosa?

2 overripe Plantains
1 cooking spoon of Water
One cup baking Flour
1 teaspoon dried Pepper
One Egg
1 Seasoning cube
Pinch of Ginger powder
Pieces of smoked Prawns( optional)
Salt to taste

Method
1, Peel , chop and blend  the plantain with water
2, Add the pepper, seasoning, flour ,Shrimp, beaten egg and pinch of salt and ginger
3, Whisk for and leave to stand for 10 minutes
4, Heat the oil and fry in small balls
