How to make Moin Moin ( in cups)

Moin Moin is one of the dishes I love to have when I am reducing the quantity of carbohydrate I consume. When I also want the meal of rice to be extra balanced nutritionally, I kind of fall back on Moin Moin. My fellow southerners will call it mai mai :). Moin Moin is simply savory beans paste that is wrapped in leaves or put in tins and steamed. these days at typical Nigerian parties moin moin is served as side dish to Jollof rice or with Eforiro for those that are trying to reduce their carbohydrate intake.

I was chatting with a younger friend of about 35yrs and she was really concerned that eating carbohydrates more than twice daily was taking a toll on her weight,waist line and Tummy. 2 lovely children, a semi sedentary life-style, traffic to and from work. The list is endless. This is a sure recipe for a quicker rate of piling on the fat. Ability to burn fat slows down with age and maintaining a sedentary lifestyle.

  • Next step is what is motivating you to stay under control.

In my friend’s case,  it is to keep her marriage.Simple! As she tells me ” too many “kokolets” are out there .
The key to weight control is a strong motivating force . What is propelling you?
I have tried to keep within a certain weight and clothes size , I have been an American size 8 for as long as I can remember. This comes with some discipline in eating. Well to help on this journey a nice plate of Moin Moin with ample quantity of vegetables will help.

 

Recipe for making Moin Moin in cups

Ingredients
1 cup Brown black eye Beans ( washed and peeled )
1/2 cup flaked steamed Mackerel Fish
2 cooking spoons Tomato/ Pepper blend
1 teaspoon Ginger paste
1- 2 cooking spoons vegetable oil
Crayfish seasoning to taste
Salt to taste
Cups for steaming

Method for making Moin Moin in cups

1,  Wash beans to remove the skin. Blend  till smooth with very little water. A good tip is to wash your beans the night before, soak in water and leave in the fridge and it will be easy on your blender.
2, Heat the oil, fry the onion, tomato/ pepper. Add the fish and seasoning. Taste for salt and correct seasoning. Cook the stew until tomato sourness goes off.
3, Pour the stew into the ground  beans , add the ginger and mix well.
4 Add a little water to beans if too thick. Consistency should not be too runny either.
5, Scoop beans mixture into cups and place in a big pot. Cover the cups with kitchen foil
6, Add water at the base of pot, to help steam the beans. Add a little water at a time so the water does not cover the beans

7, Moin moin will cook in 40 – 45 mins
