How to make Nigerian Pancakes

I grew up eating mainly homemade Nigerian foods including Nigerian Pancakes for breakfast . When ‘foreign’ meal like pancakes was on the menu the kids all had such a great time. We were exited that we were eating Oyinbo food. Mma as we call my mum insisted on localizing even pancakes. She will add chopped fresh pepper and onion to get some savory flavor. As with most children my siblings and I will set out to take out all the veggies before we ate the pancakes. Of course we were always found out as we ended up throwing them in the bin where mum will see. Talk of little brains. You can also try out more indigenious recipes like Akara and Ogi

The way the pancake tasted and the smell of onion wafting through the kitchen the kids could not resist eating all our portion right out of the draining basket and so we hardly sat at table for this meal. It was more exiting that way. Nigerian Pancakes are pretty easy to make. For a quick breakfast you can actually make the batter over night leave in the fridge and fry off the next morning.

For this recipe you may skip deep frying and rather use lightly oil frying pan particularly for those that are trying to limit oil intake. I just wanted to relive my childhood memory. I am one of the believers in eating the real thing but limit the portion and don’t do it every day. Exercise daily and keep moving. Basically my motto is eat controlled portions and keep moving. Recipe for Nigerian Pancakes for breakfast

Ingredients

2 cups Flour

1/2 teaspoon Baking powder

1/3 cup or 5 tbsp sugar

2 Eggs

1/3 cup Margarine

11/2 cups Milk (3 tablespoons powdered milk)

1/4 teaspoon grated Nutmeg

Some Chopped pepper

Some Chopped Onion

 

Method

  1. Measure out the flour and baking powder and sieve together into a bowl. Grate the nutmeg into the flour.
  2. Melt the margarine.
  3. Beat the egg.
  4. Mix the milk in water.
  5. Mix all the wet ingredients. Add the sugar into the wet mixture to dissolve.
  6. Pour the liquid mixture into the flour and blend well. Add the pepper and onion and mix.
  7. Allow the pancake batter to rest for about 10 minutes.
  8. Fry in small quantities till golden brown.
  9. Serve warm.

  • Looks like there are loads of homes where pancakes were eaten right in front of the frying pan. We used to queue up for ours as well – eaten straight from the pan. The pancakes hardly ever made it to the frying pan. Talk about hawk eyes – we would be counting how many each person eat so no one would get cheated.

    Lately I have been adding a pinch of cinnamon to my pancakes. the flavour is amazing….
