Mackerel Tomato Salad

I have found a way to make Mackerel Tomato Salad interesting . Whilst I love mackerel fish with its great source of omega 3-6-9, I must confess that sometimes the strong fishy smell could be overwhelming. Whilst steaming this fish for the salad, my son requested that the doors and the widows of the house be kept open plus he quickly switched on the smell extractor in the kitchen just to reduce the intensity of the fish smell.

My solution to reducing the strong fish flavour from the Mackerel Tomato Salad  was addition of  lemon rind. It was unbelievable how this reduced the strong smell for the fish but also left an interesting tangy taste in the salad.

Something I also did which reduced the whole cooking process was boiling the potatoes after it has been chopped, this took out at least 15 minutes cooking time. I wonder how come I never thought of this before now. I had always boiled the potatoes whole and then diced after it is cooked. First this method leaves the potatoes a bit mushy on the outside and you don’t really get the tiny perfect bite size cubes.

My tomato inspiration came from a blog I was browsing through the other day. This just makes the whole presentation of the dish much more interesting.

Pair this salad with some bread or seat it bedside some crispy plantain chips and watch your guests go with the “Hmmmmms” and “Aaahhs”. You may also wish to check out some other salad recipes.

Recipe  for Mackerel Tomato Salad

Ingredients

4 large fresh Tomato

2 cups flaked Mackerel Fish

1 large Carrot

2 medium size Potato

1/4 Green Bell Pepper

1/4 Red Bell Pepper

1 cup shredded Cabbage

1 cup chopped Lettuce

2 table spoons chopped Onion

Pinch Black Pepper

Salad dressing of choice or mayonnaise

Method

  1. Dress and wash the fish and steam with a little salt for about 15 minutes on low heat
  2. Allow the fish to cool and then flake making sure to remove all the bones
  3. Chop and shred all the vegetables into small pieces and set aside
  4. Peel the potato, cut into cubes and place in a pot of salted boiling water and boil for about 3 minutes
  5. Wash and cut the tomatoes into six segments. Do not separate the segments at the base of the tomato. Using your hands press the segments apart a bit.
  6. Mix all the vegetables and the fish and mix in the black pepper and salad dressing.
  7. Scoop the salad onto the tomato and serve chilled. You may wish to serve with some bread.
