How to make Liver Sauce?

Liver Sauce is my go to quick to make  sauce when I am trying to increase my iron level. But besides the iron story, I just like the texture of liver but I know some people who don’t. Anyway the simplicity of this sauce and the many dishes you can accompany it with makes it interesting. The addition of veggies takes my Liver sauce to a whole new level. Don’t you like the idea of a variety of texture in the mouth? Well I do. Some other experience I have with liver sauce is dipping bread into the sauce allowing it to soak up the goodness and eating. Yum. Having great sauces like Smoked Mackerel Sauce and Garden Egg Sauce just makes life easy. This way you cook and store them up in the fridge and just make your carbohydrate in a short time.

Sometimes you are advised to increase your iron level either in pregnancy or when you are recovering from malaria and your red blood cells could do with some repairs. Liver Sauce is just a simple and quick side dish that brings variety to our regular menus. This sauce will not be a bad idea for weekend breakfast. Enjoy!

Recipe for making Liver Sauce?

Ingredients

3 cups Liver

1/2 Green Bell Pepper

1 small Onion

1/2 Yellow Bell Pepper

1/4 Red Bell Pepper

1 cooking spoons Tomato/Pepper/Onion( blend , previously boiled)

2 cooking spoons Vegetable Oil

Seasoning cube to taste

Salt to taste

Method

1, Chop liver into small cubes, season with chopped onion, pepper and seasoning cube and steam gently in its juice for about 5 minutes. Add a little water  till cooked for about 10 minutes. When you cook for more than 20 minutes the liver could taste bitter. You want it to be just cooked.

2, Chop up all the bell peppers into strips

3, Heat the oil and fry the onion, add the blended vegetable mix and fry

4, Add seasonings, curry and thyme and cook for a few minutes

5, Add the liver and cook for about 2 minutes. Taste and correct seasonings

6, Add bell peppers cook for 1 minute

7, Serve with bread or mashed potatoes.
