How to make Egg cups?

Egg cups are the perfect Nigerian breakfast in bed that you can serve to your mum or any mother figure in your life on Mother’s Day or indeed any day that you want or pamper her. If you miss doing this in March, there is another mother’s day in May. Mother’s Day is one day that the world is not united on. I wonder why. Again if you miss celebrating your mum or the mother figure in your life you can safely aim for women’ day which is 8th of March and treat her to these Egg cups with dodo . Besides having this in bed I can see the convenience of these egg cups packed for her for breakfast in the office.

Eggs are such convenient protein source in the morning. Nature made it so perfect good packaging and excellent product inside. God’s creations are indeed perfect.

My daughter had actually served this Egg cups to me in bed last weekend as she said she wanted to start her celebration one week ahead. I keep fingers cross and look forward to some heavier pampering session on the d- day. Well even if you cannot make these Egg cups just be sure to do something special for mum.

How to make Egg cups with dodo?

2 Eggs

1 table spoon Tomato , chopped

1/2 tablespoon Scotch Bonnet Pepper, chopped

1 tablespoon Onion, chopped

1 1/2 tablespoons Spinach, chopped or Ugu

Few Partmenjer or Curry leaves

1 1/2 tablespoons melted Butter

1 1/2 tablespoons Olive oil or any vegetable oil

3 pieces Dodo(Fried plantain)sticks

Pinch black pepper

Chicken seasoning to taste

Little salt to taste

 

Method

1. Heat the oven and put some water in a baking tray and place in the oven to heat up

2. Chop all the vegetables and set aside

3. Oil 3 little cups with melted butter. Make sure the butter coats the side of the cups. The recipe makes 3 cups. You can use cups you use for Moin Moin if don’t have ramekins.

4. Beat the eggs , add the chicken seasoning, black pepper and salt.

5. Layer all the vegetables in the cups, ensuring to have a good mix.

6. Pour the egg over the vegetables making sure you fill half of the cup as the egg will rise when cooked.

7. Stick a piece of dodo stick in the middle of the egg cup and bake till egg is set. To be sure egg has cooked well stick a knife in the middle if it comes out clean then its cooked

8. Serve warm with a nice cup of hot beverage.

          • Hi, Devaan. Pastry requires that you follow the right quantity of ingredients. Something like the temperature of the water can spoil things. Check out my recipe which has been standardized. All the best in your next puff puff session.

  • Hello Please did you place ramekins in the water in the baking tray to bake? Is it possible to bake this without placing the ramekins in water? I plan to make these for christmas breakfast for my inlaws (14 of us in total) so I want to know if i can bake on flat baking pans which are so flat that they cannot hold water. that way i can bake so many at a time . I have a 3 gas hob cooker so the oven is a bit small.
