How To Make Agidi Coconut

Are carbs created equal?
Foods like maize, wheat, oats, rice are cereals whilst yams, potatoes and cassava are root tubers? Are they not all the bad boys that add inches to our waistlines and hips when eaten in large quantities over a long period? Yes they are. But wait a minute, there are some differences. Whilst the cereal carbs are released slowly into the system for digestion to take place, the tubers are released in a ‘gush’ and therefore require more effort for the body to digest.
The moral of this is that cereal carbs are better handled by the body system. Tuber carbs are not bad but tend to put more pressure on the system. For all carb foods eat in moderation if you are sedentary. This is why people with diabetes are advised to eat cereal carbs so that the little insulin they have can better handle the slow-releasing carbs.

Today I bring you a recipe that has helped me like agidi and I am finding it quite ‘light’ on the tummy. You know that feeling of comfortable satisfaction. I have also tried out several other ways of creating interesting things from the simple ogi you find around your neighborhood.

Recipe for Agidi Coconut

Ingredients
2 tablespoons Ogi
1/2 cup Coconut milk
1/2 teaspoon dry Chilli Pepper
1/2 cube Chicken seasoning
1/4 spoon grated Ginger
Pinch of salt
1/2 cup boiling water

Method
1. Add the pepper, ginger, seasoning,and salt into the coconut milk
2. Dissolve the Ogi in the coconut milk
3. Boil some water , place the Ogi on the burner ,stir and add 1 cup of the boiling water gradually into the Ogi and keep stirring.
4. Cook for about 3-4 minutes stirring until it is quite thick , that is thicker than Ogi
5. Scoop the thick Ogi into any desired mold and allow to cool and set for about 30 minutes .The Agidi is ready.

You can enjoy the Agidi with Akara or Moin Moin , vegetable and pepper sauce if desired.

Piped plain Agidi
1. To get the piped Agidi shape, when the ogi is ready allow to rest for about 2 minutes, spoon into the piping gun. Allow the ogi in the gun to rest for another 8 minutes and pipe onto a flat surface. Allow to cool and use accordingly on Moin Moin, for example.
