It’s back to school season . Now no matter how long you’ve been a mum, we stress much in the first few days of school resumption. What will they eat for breakfast tomorrow, what will be in the school lunch box? Having a nutritious spread like Peanut Cashew nut Butter helps to reduce stress.

Firstly, the challenge for breakfast is the limited time to make something complicated.  Secondly is the speed at which the kids want to eat in the morning. When they are not in the mood to go to school they suddenly try the go slow eating style just to frustrate you.

One thing that can easily compliment that ‘bread and tea”  is a nice nutty spread on the bread instead of just plain fat. Peanut Cashew nut Butter are great compliments to bread.  If you have more time you can go further and include slices of tomato and lettuce to make a great sandwich. Are the kids slow eaters? Well guess what you can do is pack the sandwich for them.

Remember a jar of savoury Peanut Cashew butter in the fridge is all you need for a nutritious option for bread in the morning. I also tried it with pancakes and it works. Enjoy this new week!

 

Recipe for Home made Peanut Cashew nut Butter

Ingredients

1 cup Peanut or groundnut

1/2 cup cashew nut

1 African nutmeg (also known as Iwun or Ehuru)

Dry Pepper to taste

1/4 teaspoon crushed chicken seasoning cubes

Homemade Cashew Nut Butter (1)

Method

  1. Remove outer skin from African nutmeg by simply cracking with your teeth.
  2. Place it in a zip lock bag and using a rolling pin or small pestle crush the nuts into tiny bits to it easy to go through the blender.
  3. Blend all ingredients together until very smooth and runny.
  4. Store in a bottle and use as desired on bread, apples and even grapes.


Homemade Cashew Nut Butter (5)

Tip: If using the dry ingredient part of the blender, you are advised to blend small quantity of nuts per time.

If you are preparing large quantities, you can have this done for you in the market or at your neighbourhood miller.
