Many women are holding down a 9 – 5 job or running a business. In additionsome  have young children or even older ones to attend to. The challenge of  attending to school open day, keeping  your hairdressers appointment and still keep food on the table is real. .  I share your challenge and I am offering something to take the pressure off you in the food department.  A good Nigerian Family Meal Plan sure helps to keep everyone nourished. Some little organization in the food and kitchen area can help you get through the clutter of the day. This Nigerian Family Meal plan is a guide and you may want to tweak it a bit to suit your particular needs.

Nigerian Family Meal Plan

I have carefully picked the dishes to ensure a balanced meal throughout the week. You will find that I have repeated some sauces just to make life easier. For some of the sauces – like chicken stew, the idea is to make plain chicken stew and then buy some spinach or carrot and cabbage on your way from work. Heat up the stew, prepare and add the veggies of choice to the stew whilst warming and bang…you have a near-new dish on the table without having to do it from scratch.

Time Saving Tips  for Nigerian Family Meal Plan:

1. As much as possible try to do all your Soups, Stews and Sauces over the weekend and the week may be less stressful

2. Portion your soups in coloured individual bowls to quicken thawing time and preserve taste of the soup.

3. Peanut Butter is quite handy for quick meals like bread. Make in bulk and store in the fridge.

4. Invest in a Pressure Cooker. It shortens cooking time for tough meats and produces great results for Beans Pottage.

5. Moin moin can be made in advance and kept in the freezer.

6. Get the kids to help set the table and clear their plates to the sink after eating. If they are old enough to wash plates then insist on them doing the washing.

Here are further tips to guide you through the week:

Sunday:

Prepare your coconut milk for the Oat cereal on Saturday and leave in the fridge for use on  Monday morning.

Make enough egg stew to use for Tuesday’s breakfast.

Monday:

Make the pancake batter on Sunday night and leave in the fridge for use on Monday.

When heating up your stew, add fresh vegetables to vary the stew and present the same stew  in a different way.

Tuesday:

Use leftover Egg stew from Sunday for breakfast.

Wednesday:

Boil egg the on Tuesday night and leave in the fridge. Bring it out of the fridge in the morning and leave on kitchen work top to warm up. No need to boil again.

Thursday:

Make a good batch of peanut butter and keep in the fridge for the kids to use during the week. It is healthier than margarine.
