Baked Jumbo Prawns with White Rice

Simplicity and quick is what can best describe this meal.It is  great for lunch or dinner.You can load it also with lots of carrots and runner beans for a more filling effect. As most followers on this blog would have noticed I just love seafoods. When I had my last baby …quite some time now , I ate shrimps as if it was going out of fashion. But again I was trying to increase my iodine intake to prevent goitre ( swelling of the thyroid  gland ,on the frontal part of the neck) . This was before the national salt iodization. Well my shrimp  romance paid off as my thyroid was okay after baby came. So much for the lecture , now lets get into the kitchen and cook the meal.

Recipe( Serves4)
8 pieces of Jumbo Prawns
6 pieces Tomato( diced)
2 medium size Onion( diced)
3 pieces Fresh Scotch Bonnet Pepper( diced)
1 large Green Pepper , optional ( diced)
1/2 cup Vegetable Oil
1/2 teaspoon Ginger powder
1/2 teaspoon dry Pepper( optional)
Pinch thyme or 1 teaspoon chopped fresh Basil
Seasoning to taste
Salt to taste

1, Wash and season the prawn with salt, ginger powder, dry pepper, pinch crayfish seasoning . Rub spices well into the prawn  , drizzle on some oil and bake in the oven at 375 degrees for 20 minutes.
2, Heat up remaining oil and fry off the vegetables with thyme or basil until soft. Correct the seasoning. Crush down some of the tomato to make a nice thick sauce.
3, Serve with the baked prawns and rice and vegetables.

Cooking tip:
If you don’t want to bake the prawns , heat up very little oil in a frying pans , fry the prawns till a bit brown on the outside,  sprinkle very little water on the prawns, just like you are trying to wet your dress for ironing
