​​​​​How To Make Carrot Cake

I likewhen I am whipping sugar and butter to make cakes like my Carrot Cake. The motion helps to work my arm muscle. A case of multitasking I will say. Over the weekend I just felt like smelling the aroma of freshly baked cake in the house. Now don’t ask me why, some thoughts just happen. I decided it was going to be Carrot Cake because have not had it for some time.

 

With some carrots, flour and eggs in the fridge, all my ingredients were in house. I love having coffee with cakes particularly at weekends. The result of my first attempt at carrot cake was so good I wondered how come I never tried. To think that I could easily have been having freshly baked Carrot cakes with my coffee all this while.

With Carrot cakes even the most amateur baker will get this right as I did. The secret to bake produce is to measure correctly and handle the produce as specified in the recipe. Carrot cakes provide you the opportunity to include some vegetable into your diet, which why I could do this in cupcake size and include in the kids lunch box or even take to work for coffee.

 

Recipe for Carrot Cake

Ingredients

11/2 cups plain Flour

3 level teaspoon Baking Powder

1 teaspoon Cinnamon

1 1/3 cups grated Carrot

3 Eggs

1 1/3 cups soft Brown Sugar

1 cup vegetable Oil

3/4 cup Currants

3/4 cup Walnut

Zest of 1 Orange

Method

  1. Preheat oven to 325 degrees Fahrenheit or gas mark 3.  Lightly grease and line a 24 cm cake tin. Instead of greasing the tin, you may wish to line the tin with parchment paper instead.
  2. Sift the flour, baking powder and cinnamon into a bowl and mix in the grated carrot. Make a well in the mix.
  3. In a separate bowl, whisk the eggs and slowly whisk in the oil and brown sugar. Pour the liquid mix into the dry ingredient well and combine in a slow motion. Fold in the currants and walnut and orange zest.
  4. Pour mixture into cake tin and bake for about 1 hr. To test if cake is ready, piece a sharp knife through the middle of the cake, if it comes out clean then it is ready. Avoid opening the oven when cake is placed in the oven until about that 1 hr timing.
  5. When cake is out of oven allow it to rest for about 5 minutes before leaving on a rack to cool.
  6. Serve warm.

Tip: If you cannot find walnut you can make do with cashew nuts or any other nut that is light flavoured.

  • Good morning, pls when does the brown sugar come in and in absence of it can one use normal white sugar and maybe cocoa powder?
